Ingredient Preparation

Wash the lamb and slice it; wash the cilantro and cut into sections.

Stir-frying the Lamb

Heat oil in a wok, add Sichuan peppercorns to flavor the oil, then add the lamb and stir-fry. Add a small amount of salt, cooking wine, and light soy sauce. If the lamb releases water, you can pour the water out after the lamb changes color, and continue to stir-fry.
