Curry Crab

Ingredients

Crab (cleaned, gills and inedible parts removed, cut into pieces) 1
Celery (leaves removed, diagonally sliced) 200 g
Scallion segments 30 g
Cilantro, chopped 30 g
Red chili, minced 1 tbsp
Shallot, minced 1 tbsp
Onion (julienned) 1/2
Curry powder 2 tbsp
Brown sugar 2 tsp
Fish sauce 2 tbsp
Soy sauce 1 tsp
Coconut milk 3 tbsp
Water 1/2 cup
Flour (for coating) a pinch
Oil 2 tbsp

Step 1

Clean the crab, remove the gills and other inedible parts, wash thoroughly, and cut into pieces for later use. Remove the leaves from the celery, wash, and cut diagonally into segments for later use. Also julienne the onion and set aside.

Heat oil in a pan. Coat the crab pieces lightly with flour, add to the pan, and stir-fry until golden on the outside, then remove and set aside. Heat the wok and add 2 tbsp oil. Sauté the minced red chili, minced shallot, and julienned onion until fragrant. Add the curry powder and brown sugar, stir-frying until the curry aroma is released. Then add the fried crab pieces, celery segments, scallion segments, fish sauce, soy sauce, coconut milk, and water. Cook through, plate, sprinkle with chopped cilantro, and serve.
