Advance preparation
Bring the butter to room temperature to soften; sift Ingredient A with a sieve; combine Ingredient B together with a sieve; line a baking sheet with a layer of parchment paper; preheat the oven to 180°C before baking.
Step 1
Use an electric mixer to beat the butter until creamy.
Step 2
Add the salt and caster sugar, and mix until evenly combined.
Step 3
Whip until the mixture turns white.
Step 4
Add the egg yolks, mix evenly, then divide into two portions.
Step 5
Add the flour and mix evenly. Add Ingredient A to one bowl and Ingredient B to the other, folding each with a rubber spatula until there are no lumps, then knead into a dough.
Step 6
Wrap in plastic wrap and rest in the refrigerator for about 1 hour.
Step 7
Roll out the dough with a rolling pin. Dust the work surface with a suitable amount of bread flour, and roll each portion of dough into a sheet about 7 mm thick.
Step 8
Cut out the dough with a cutter and place on the baking sheet. Bake in the oven preheated to 180°C for about 12–15 minutes.
Step 9
Cool on a cake cooling rack.
Step 10
Prepare the lemon icing. Place the powdered sugar in a bowl, add the lemon juice, and stir with a small whisk until sticky and smooth.
Step 11
Prepare the coffee icing. In another bowl, add the powdered sugar, pour in the coffee dissolved in hot water, and stir with a small whisk until sticky and smooth.
Step 12
Decorate the cookies. Place each icing into a cone-shaped bag made from parchment paper, and pipe patterns onto the cookies.
