Story

This dish brings together soft eggplant, golden potatoes, and fragrant peppers in a savory stir-fry. The deep-frying step ensures a rich texture and hearty flavor, making it a satisfying comfort meal best enjoyed with steamed rice.

Ingredients

Long eggplant 1 piece
Hot pepper 2 pieces
Potato 1 piece
Garlic 3 cloves
Light soy sauce to taste
Dark soy sauce to taste
Oyster sauce to taste
Cooking oil to taste g

Green pepper

Step 1

Prepare the ingredients as shown in the picture.

Wash the eggplant and cut into rolling chunks.

Peel and wash the potato, cut into rolling chunks; remove seeds and wash the pointed peppers, cut in half then cut into diamond-shaped chunks; smash the garlic into large pieces.

Heat up the wok, add an appropriate amount of oil, and add the eggplant chunks to fry once the oil is hot.

Fry until the eggplant becomes soft, squeeze out the absorbed oil, remove the eggplant and drain the oil for later use.

Use the oil from frying the eggplant to fry the potato until it turns golden yellow.
