Ingredients

crucian carp 1 piece
ginger 1 piece
scallion 1 stalk
garlic 1 piece
mala cumin marinade 4 tablespoons

Step 1

Clean the crucian carp, stuff the belly with ginger, scallions, and garlic. Add a little water, and also add ginger, scallions, and garlic to the water to remove the fishy odor. Microwave on medium-high heat for 5 minutes, flip it over, and microwave for another 2 minutes.

The crucian carp is now cooked. The resulting fish broth releases oil and is quite salty; you can pour it out and add a bit of salt, then microwave the broth on high heat for 1 minute. If you find it too fishy, simply pour out the excess broth.

You can buy a pre-packaged seasoning mix from the supermarket that has all the spices, but it contains a lot of additives. It is still best to mix your own seasoning powder using salt, cumin, chili, and Sichuan peppercorns, and sprinkle it on both sides of the fish and inside the belly.
