Dog Meat Porridge with Walnut Kernels

Ingredients

Lean dog meat (tendons and fascia removed, minced into fine paste) 200 g
Walnut kernels (blanched, peeled, broken into small pieces) 100 g
MSG 5 g
Starch (to taste) 15 g
Cooking wine 15 g
Milk 50 ml
Dog bone broth (for thinning the dog meat paste) 150 ml
Ginger juice 5 g
Salted flour 2 g

Prepare main ingredients

Remove all tendons and fascia from the dog meat, then mince it into a fine paste. Place the paste in a porcelain dish, add dog bone broth to thin it, then mix in starch until well combined; blanch the walnut kernels in boiling water, drain, peel off the skins, then break into small pieces by hand.

Cook into porridge

Place a wok over heat, add chicken broth, bring to a boil and skim off any foam. Add the mixed dog meat paste, broken walnut kernels, MSG, salted flour, and cooking wine. Bring back to a boil, then pour in milk and stir until the mixture reaches a porridge-like consistency. Drizzle in ginger juice, then transfer to a serving bowl.
