Ingredients

Chicken thigh meat 500g
Starch to taste
Scallion to taste
Ginger to taste
Garlic to taste
Red pepper to taste
Sichuan peppercorn to taste
Green Sichuan peppercorn to taste
Salt 1 tbsp
Sugar 1 tbsp
Cooking wine 2 tbsp
Soy sauce to taste
Pixian bean paste 1 tbsp

Wash the chicken leg meat, debone and skin it, then cut into small pieces

Add salt, sugar, cooking wine, and soy sauce, mix evenly, and marinate for five minutes

Coat the surface of the chicken meat and chicken cartilage with a thin layer of dry starch
