Dry-Fried Green Beans

Ingredients

Green beans (remove strings, wash and drain) 500 g
Lean pork (rinsed and minced) 150 g
Fried preserved vegetable bits 1 tbsp
Dried shrimp (soaked until soft and chopped) 1 tbsp
Chopped scallions 1 tbsp
Minced ginger 1 tsp
Cooking wine 1 tbsp
Salt (seasoning) 1/4 tsp
Sugar (seasoning) 1 tsp
Light soy sauce (seasoning) 1/2 tbsp
Sesame oil (seasoning) 1/2 tsp
Water (seasoning) 1/2 cup

Instructions

1

Prepare the ingredients

Rinse the pork and mince it finely. Soak the dried shrimp until soft, then chop finely.

2

Fry the green beans

Remove the strings from the green beans, wash and drain well. Heat oil in a wok, briefly fry the beans, then remove and drain off excess oil.

3

Stir-fry to finish

Heat the wok, add 2 tbsp of oil, and sauté the minced ginger until fragrant. Add the pork, dried shrimp, and fried preserved vegetable, and stir-fry briefly. Add the green beans, splash in the wine, then add the seasonings. Reduce to medium heat and cook until the sauce evaporates. Sprinkle with chopped scallions, toss to combine evenly, and serve.
