Story

This crowd-pleasing dish brings together tender shrimp with crispy potato and sweet potato slices, colorful bell peppers, and tender broccoli. The key is getting a nice golden crust on the shrimp while keeping the vegetables fresh and vibrant.

Ingredients

large shrimp, peeled and deveined 1 lb
potato, sliced thin 1 medium
sweet potato, sliced thin 1 small
broccoli florets 1 cup
green bell pepper, sliced 1
onion, sliced 1/2 medium
garlic cloves, minced 4
fresh ginger, sliced 1 inch
green onions, chopped 3
celery stalks, sliced 2
fresh chili peppers 2
vegetable oil for frying 2 cups
soy sauce 2 tbsp
oyster sauce 1 tbsp
sugar 1 tsp
water 1/4 cup

Prep the shrimp

Rinse the shrimp under cold water and pat completely dry with paper towels. Remove the dark vein along the back if needed. Thoroughly drying the shrimp ensures they'll get crispy when fried.

Prep the vegetables

Slice the potato and sweet potato into thin rounds. Cut the broccoli into bite-sized florets. Slice the bell pepper, onion, celery, and chili peppers. Mince the garlic and slice the ginger. Chop the green onions, keeping the white and green parts separate.

Blanch the broccoli

Bring a pot of salted water to a boil. Add the broccoli florets and cook for about 2 minutes until bright green and slightly tender. Drain and set aside.

Fry the shrimp

Heat oil in a deep pan or wok to 350°F (175°C). Add the shrimp in a single layer and fry for 2-3 minutes until golden and opaque. Remove with a slotted spoon and drain on paper towels. Repeat in batches if needed.

Fry the root vegetables

Using the same oil, fry the potato and sweet potato slices in batches until golden brown and crispy, about 3-4 minutes each. Remove and drain on paper towels.

Fry the onion and pepper

Add the onion and bell pepper slices to the hot oil and fry for about 1-2 minutes until slightly softened and lightly browned. Remove and set aside.

Make the sauce

In a small bowl, mix together the soy sauce, oyster sauce, sugar, and water until combined.

Build the dish

Pour off most of the frying oil, leaving about 2 tablespoons. Heat over medium-high heat. Add the minced garlic, sliced ginger, and the white parts of the green onions. Sauté for 30 seconds until fragrant.

Combine and finish

Add the fried shrimp and stir for about 1 minute. Pour in the prepared sauce and toss everything together until well coated. Add the fried vegetables, blanched broccoli, and remaining green onions. Stir gently to combine and heat through. Serve immediately while hot.
