Earthen Pot Tea
Traditional tea preparation from Jing County in southern Anhui, where tea is roasted in small clay pots before brewing.
Ingredients
Tea leaves (green tea)
to taste
Small earthenware pot (clay-made, dark gray exterior, with aged tea stains inside)
fist-sized
Boiling water
to taste
Instructions

Roasting the Pots
Place three washed small pots on the fire pit and let them dry over the heat.

Roasting the Tea
Add the tea leaves one by one and roast slowly, repeatedly lifting and shaking the pot to flip the contents, doing so many times until the tea leaves turn a deep, glossy color and release a rich aroma.

Brewing
In turn, pour boiling water into each pot until the foam just reaches the rim, then nestle the pots into the scalding ash at the edge of the fire pit.

Tasting
After a short while, once the water inside the pots comes to a boil, pour it out and drink.
