Minced Garlic Pork Slices with Tofu

Minced Garlic Pork Slices with Tofu

Ingredients

lean pork (cut against the grain into thin slices about 4x2 cm) to taste
water 1 tbsp
light soy sauce 2 tsp
dark soy sauce 1 tsp
Shaoxing wine 1 tsp
cornstarch 1 tsp
sugar 1/2 tsp
sesame oil 1/2 tsp
white pepper a pinch
salt a pinch
oil 1 tbsp
tofu (cut into 2x4x1 cm pieces, drained) to taste
minced garlic to taste
chopped scallions to taste

Preparation

Cut the pork against the grain into thin slices about 4x2 cm. Place in a small bowl, add water and mix well. After 10 minutes, once the water has been absorbed, add the seasonings one by one and mix well. Finally, add oil to separate the pork slices, and marinate for at least 10 minutes.

Cut the tofu into 2x4x1 cm pieces, sprinkle with salt, and let the water drain away.

Spread the tofu pieces in a single layer on a shallow plate, heat on high for 2 minutes, then carefully pour into a colander to drain. Wash the shallow plate and dry it.

Add oil and minced garlic to the shallow plate, heat on high for 2 minutes. Add the pork slices, arrange in a single layer, push toward the edges to form a ring, and heat on high for 40 seconds. Quickly break apart the pork slices, cover, heat on high for an additional 1 minute, then remove.

Mix the slurry ingredients together and place in the plate, stirring continuously until well combined. Add the tofu, cover, and heat on high for 2 minutes. Place the pork slices on top of the tofu, heat for 1 minute. Mix all the ingredients together, sprinkle with chopped scallions, and serve directly from the original plate.
