Fermented Rice Sweet Rice Ball Soup
A sweet soup simmered with fermented rice (jiuniang) and fruit, served with glutinous rice balls filled with flowing sesame paste.
Ingredients
sesame molten-sugar sweet rice balls (pre-cooked and set aside)

fine granulated sugar

fermented glutinous rice

white vinegar

kiwi (peeled and cut into small cubes)

banana (peeled and cut into small cubes)
a pinch
strawberry (hulled, washed and cut into small cubes)
a pinch
juicy peach (peeled, pitted and cut into small cubes)
a pinch
water starch (for thickening)
a pinch
egg white (beaten and set aside)

Instructions

Cook the sweet rice balls
Cook the sesame molten-sugar sweet rice balls and set aside.

Prepare the fruits
Peel the kiwi and banana. Hull and wash the strawberries, peel and pit the juicy peach, then cut all the fruit flesh into small cubes.

Make the sweet soup base
Pour the fine granulated sugar and water into a pot, bring to a boil, then add the fermented glutinous rice, white vinegar, kiwi, banana, strawberry and juicy peach, and stir to combine.

Combine all ingredients
Add the cooked sesame molten-sugar sweet rice balls, thicken the mixture lightly with water starch, then turn off the heat, slowly pour in the beaten egg white and stir well to combine.
