The dish's famous "fish flavor" does not actually contain any fish, but is instead masterfully created through a specific blend of seasonings.

salad oil 65g
vinegar 8g
refined salt 2g
white sugar 10g
chopped scallions 60g
minced ginger 3g
minced garlic 5g
soy sauce 6g
minced pickled red chili 20g
cooking wine 4g
water starch 6g

Instructions

Step 1

Remove the tendons from the pork and slice into large pieces about 0.2 cm thick. Roll the meat slices into a cylinder shape, and use a knife to cut into shreds about the thickness of a matchstick. Place in a bowl, add 1 gram of salt, cooking wine, and a little water, and mix well by hand. Then add starch and mix well to coat.

Mix white sugar, soy sauce, salt, and vinegar in a bowl, add a small amount of water and starch, and blend into a sauce. Set aside for later use.

Place the wok over heat and add oil. When the oil is 50-60% hot, add the coated pork shreds to the wok. Quickly stir-fry and break them apart with a spatula. Stir-fry until the pork shreds stretch out and turn white, then add minced pickled chili and minced ginger; stir-fry until fragrant and colored. Immediately add minced garlic and stir-fry until fragrant, then add chopped scallions and pour in the prepared sauce. Stir-fry evenly and dish out.
