Step 1
Combine low-gluten flour with rendered lard to make the shortening dough; combine high-gluten flour with lard and warm water to make the wrapper dough.
Step 2
Divide both doughs into portions. Wrap the shortening dough portion inside the wrapper dough portion, roll out into a thin sheet, and roll up into a cylinder. Use a knife to cut lengthwise in half, roll out into a thin sheet again, wrap with lotus seed paste filling, and pinch the edges closed to form an oval shape.
Step 3
Deep-fry in warm oil until the pastry layers become distinct and it turns light yellow.
