Ingredients

Chicken legs (washed and cut into two sections) 300g
Mushrooms (washed and sliced) 75g
Onion (washed and cut into chunks) 20g
Cooking oil (for deep frying) 50g (actual consumption)
Tomato sauce 1 tbsp
Oyster sauce 2 tsp
Soy sauce (for marinating) 1 tbsp
Cooking wine 2 tbsp
white sugar 1/2 tbsp

Instructions

Marinate Chicken Legs

Wash the chicken legs and cut into two sections. Mix with soy sauce and marinate for 10 minutes, then deep-fry in hot oil until colored, and remove.

Prepare Mushrooms

Wash the mushrooms, then blanch in boiling salted water. Remove, rinse until cool, and slice.

Stir-fry

Wash the onion and cut into chunks. Stir-fry with an appropriate amount of oil until fragrant, then pour in the mushrooms and stir-fry together. Add cooking wine, tomato sauce, oyster sauce, sugar, and pepper.

Braise and Reduce Sauce

Add the chicken legs, adjust to low heat and braise until the flavors are absorbed. When the chicken legs are cooked and tender, stir-fry until the sauce slightly reduces, then serve.
