These golden banana pancakes are wonderfully simple to make and taste like a hug in the morning. Ripe bananas mash into the batter, creating natural sweetness without needing much added sugar.

all-purpose flour 1 cup
milk 3/4 cup
egg 1 large
baking powder 1 teaspoon
sugar 1 tablespoon
butter 1 tablespoon, melted
salt pinch
powdered sugar for dusting

Prepare the bananas

Peel the bananas and cut into small chunks. Use a fork to mash them thoroughly in a mixing bowl until mostly smooth with just a few small lumps for texture.

Mix the wet ingredients

Add the egg, milk, and melted butter to the mashed bananas. Whisk everything together until well combined.

Add dry ingredients

Sift in the flour, baking powder, sugar, and salt. Stir gently until just combined into a smooth batter. A few small lumps are fine—don't overmix or the pancakes will be tough.

Cook the pancakes

Heat a non-stick pan or griddle over medium-low heat. Use a spoon to drop batter onto the pan, forming small circles. Cook for 2-3 minutes until bubbles form on the surface and edges look set. Flip carefully and cook another 1-2 minutes until golden brown.
