Cold Sesame Tofu Salad

Story

This classic northern Chinese cold dish comes together in minutes. The silky texture of the sesame tofu pairs beautifully with the rich peanut dressing.

Ingredients

sesame tofu (麻腐) 300g, cut into 1-inch cubes
smooth peanut butter 2 tablespoons
light soy sauce 1 tablespoon
garlic 1 clove, minced
rice vinegar 1 teaspoon
sesame oil 1/2 teaspoon
chopped cilantro for garnish
roasted peanuts for garnish

Instructions

Blanch the tofu

Bring a pot of water to boil. Add the sesame tofu cubes and blanch for 30 seconds. Drain and repeat once more for a cleaner texture. Pat completely dry with paper towels.

Make the dressing

In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, and minced garlic until smooth. Add a splash of warm water if needed to reach a pourable consistency.

Combine and serve

Transfer the tofu to a serving plate. Drizzle the peanut dressing over the top. Garnish with crushed roasted peanuts and fresh cilantro. Serve immediately or chill for 30 minutes for deeper flavor.
