Fluffy Dorayaki Pancakes

Story

Dorayaki is a beloved snack in Japan, famously associated with the anime character Doraemon. The key to perfect dorayaki is getting the batter smooth and cooking the pancakes low and slow so they remain soft and moist.

Ingredients

Eggs 3 large
Granulated sugar 40g
Milk 45g
Cake flour 120g
Salt 1g
Baking powder 2g
Sweet red bean paste (Anko) as needed
Honey or Mirin 1 tablespoon (optional for richness)

Whisk the Eggs and Sugar

Crack the eggs into a bowl. Add the granulated sugar in three separate batches, whisking thoroughly after each addition until the sugar dissolves and the mixture becomes pale and slightly thickened.

Combine Liquids

Pour the milk into the egg mixture and stir until fully incorporated. If using honey or mirin for extra flavor and moisture, add it at this stage.

Sift and Mix Dry Ingredients

Sift the cake flour, salt, and baking powder directly into the wet mixture. Gently fold the batter with a spatula or whisk until smooth and no lumps remain, being careful not to overmix.

Cook the Pancakes

Heat a non-stick frying pan or griddle over low heat. Lightly oil the surface if needed. Pour small circles of batter onto the pan. Cook until bubbles form on the surface and the edges set, then flip and cook the other side until golden brown. Let cool on a wire rack.

Assemble the Dorayaki

Take one pancake and spread a generous layer of sweet red bean paste on the flat side. Top with another pancake to create a sandwich. Repeat with the remaining pancakes and serve.
