Whisk the Eggs and Sugar
Crack the eggs into a bowl. Add the granulated sugar in three separate batches, whisking thoroughly after each addition until the sugar dissolves and the mixture becomes pale and slightly thickened.
Combine Liquids
Pour the milk into the egg mixture and stir until fully incorporated. If using honey or mirin for extra flavor and moisture, add it at this stage.
Sift and Mix Dry Ingredients
Sift the cake flour, salt, and baking powder directly into the wet mixture. Gently fold the batter with a spatula or whisk until smooth and no lumps remain, being careful not to overmix.
Cook the Pancakes
Heat a non-stick frying pan or griddle over low heat. Lightly oil the surface if needed. Pour small circles of batter onto the pan. Cook until bubbles form on the surface and the edges set, then flip and cook the other side until golden brown. Let cool on a wire rack.
Assemble the Dorayaki
Take one pancake and spread a generous layer of sweet red bean paste on the flat side. Top with another pancake to create a sandwich. Repeat with the remaining pancakes and serve.
