Fondant Icing

Ingredients

unflavored gelatin 2 packets or 1 tbsp plus 2 tsp
cold water 1/4 cup
glucose syrup (Wilton brand) 1/2 cup
solid vegetable shortening 2 tbsp
glycerin (Wilton brand) 1 tbsp
powdered sugar (sifted) 8 cup (about 2 lbs)
food coloring and flavoring to taste

Instructions

1

Soften the Gelatin

Combine the gelatin and cold water, and let stand until the gelatin softens.

2

Heat Until Dissolved

Place the gelatin mixture in the top of a double boiler and heat until dissolved. Stir in the glucose syrup until well combined.

3

Incorporate the Fats

Stir in the shortening and remove from heat before it fully melts. Add the glycerin, flavoring, and coloring. Cool until lukewarm.

4

Knead the Fondant

Place 4 cups of the powdered sugar in a bowl and make a well in the center. Pour in the warm gelatin mixture and stir with a wooden spoon, gradually adding the remaining powdered sugar until the mixture is no longer sticky. Knead until smooth, soft, and non-stick.
