Fresh Mushrooms with Flat Beans
A soup of mushrooms simmered with lentils, traditionally valued for supporting the spleen, dispelling dampness, and replenishing qi.

fresh mushrooms (blanched in boiling water)

flat beans (strings removed, washed and cut into diagonal pieces)

chicken broth
to taste
MSG
to taste
fine salt
to taste
sugar
to taste
lard
to taste
sesame oil

wet cornstarch (for thickening)
to taste
cooking wine
to taste

Preparing ingredients
Blanch the fresh mushrooms in boiling water. Remove the strings from the flat beans, wash them, and cut into diagonal pieces.

Simmering
Place the chicken broth in a wok and bring to a boil. Add the mushrooms and flat beans, then season with MSG, fine salt, and cooking wine, and bring back to a boil.

Plating and thickening
Carefully lift out the mushrooms and flat beans and arrange them on a plate. Stir wet cornstarch into the broth to thicken it, then pour the thickened sauce over the vegetables. Finish with lard and sesame oil before serving.
