This simple jam celebrates the intense flavor of passion fruit. The key is choosing fruit that feels heavy for its size with deeply colored skin—these will be the juiciest and most flavorful. The natural pectin in the fruit creates a lovely gel without needing any added thickeners.

ripe passion fruit 12-15 medium fruits (about 500g pulp)
granulated sugar 1 to 1.5 cups (adjust to taste)
fresh lemon juice 2 tablespoons

Select and prepare the fruit

Choose passion fruits that feel heavy and have wrinkled, deep purple skin—these are fully ripe and packed with juice. Cut each fruit in half, then scoop the aromatic pulp and seeds into a clean bowl. You can strain out the seeds if you prefer a smoother texture, though many enjoy the tiny crunch they add.

Extract and rest the pulp

Transfer the passion fruit pulp to a container, cover, and let it rest in the refrigerator overnight. This resting time allows the flavors to deepen and the natural juices to fully release. If you're short on time, three hours will work in a pinch.

Cook the jam

Pour the rested pulp into a wide, heavy-bottomed pan. Add the sugar and lemon juice, then bring to a gentle boil over medium heat, stirring occasionally. Once boiling, lower the heat and let it simmer, stirring more frequently, until the mixture thickens and coats the back of a spoon—about 15-20 minutes.

Test and jar the jam

To check if the jam is ready, place a small dollop on a frozen plate. If it wrinkles when pushed with your finger, it's set. Remove from heat, skim off any foam, then carefully pour into sterilized jars. Seal tightly and let cool completely before storing.
