Fried Eight Pieces
A traditional, well-known Fujian (Min) cuisine dish. Chicken is cut into pieces, marinated, then fried until golden, with a crispy exterior and tender interior.
Ingredients
Young hen (feathers removed, innards removed, breast cut into 4 pieces, each leg cut into 4 pieces)
1 (500 g)
Minced scallion
a pinch
Minced ginger
a pinch
Yellow rice wine
20 g
White sugar
6.5 g
Soy sauce
a pinch
Water chestnut starch
6.5 g
Sesame oil
20 g
Lard (for frying)
500 g

Step 1
Kill the hen, remove feathers and innards, then remove the breast and cut it into 4 pieces, cut each leg into 4 pieces, discard the rest. Add the chicken pieces to the marinade mixed with sugar, rice wine, soy sauce, scallion and ginger, toss to coat, marinate for 20 minutes, then add water chestnut starch and toss to coat.

Heat lard (500 g) in a pan over medium heat, add the chicken pieces and fry until golden brown, drain off the oil, then add soy sauce, sugar, sesame oil and rice wine, bring to a boil once and it is ready.
