Fried Plantain Balls
Caribbean-style sweet and savory fried balls made from mashed ripe plantains blended with peanuts and chili peppers.

Very ripe plantains

Salted peanuts (crushed)

Leeks (cut into thin strips)

Habanero pepper (very finely chopped)

Lime (juiced)

Prepare the plantain mash
Peel the plantains, mash them with a fork in a bowl. Transfer to a large bowl, add peanuts, leeks, chili, lime juice, salt and pepper, and mix well. Add flour and stir until evenly combined with a spatula.

Fry
Heat the oil. Scoop the mixture into balls with a spoon, fry in batches in the hot oil for 3 minutes. Drain on paper towels and serve while hot.
