A beloved staple of Chinese home cooking and casual dining, this crispy fried sesame pork tenderloin is a common feature at family meals and small festive gatherings, prized for its addictive crunchy sesame coating and juicy, savory pork interior.

Ingredients

pork tenderloin (sliced, cross-scored, cut into strips) 400g
egg (take egg white) 1 piece
sesame 25g
refined salt 15g
MSG 10g
Shaoxing wine 15g
soy sauce 10g
peanut oil (actual oil used 100g) 500g
starch (wet starch) 10g

Instructions

Step 1

Slice the pork tenderloin into 1cm thick slices, evenly cut cross-hatch marks on both sides of the slices, then cut them into strips 3.5cm long and 1.5cm wide and put them into a container. Add refined salt, MSG, Shaoxing wine, and soy sauce, then marinate until the flavor is fully absorbed.

Put egg white in another bowl, mix with wet starch evenly to form a smooth batter, and set aside.

Put peanut oil in a wok, heat over medium heat until it reaches 60% heat (approximately 150℃). Coat each strip of meat with the egg batter one by one, then dip them fully in a layer of sesame seeds, put them into the oil and deep-fry until cooked through, then remove. Wait until the oil temperature rises to 80% heat, then put the meat back into the oil for a second fry, fry until the meat turns golden brown, then remove to drain excess oil, arrange on a plate and serve.
