Fruit Breakfast Bars

Homemade fruit breakfast bars are healthier and more delicious than store-bought versions, and will keep for up to 4 days when stored in an airtight container.

Fruit Breakfast Bars

Ingredients

apple sauce 250 g
chopped dried apricots 115 g
raisins 115 g
brown sugar 50 g
sunflower seeds 50 g
sesame seeds 25 g
pumpkin seeds 25 g
rolled oats 75 g
whole wheat cake flour 75 g
shredded coconut 50 g
eggs 2

Instructions

Preheat Oven

Preheat oven to 200°C (Th. 7). Grease a 20 cm diameter shallow cake pan, line with baking paper (it is recommended to let the paper extend beyond the pan edges for easy removal).

Mix Wet Ingredients

Add apple sauce, dried apricots, raisins, brown sugar, sunflower seeds, sesame seeds, and pumpkin seeds to a bowl. Stir with a wooden spoon.

Mix Batter

Add rolled oats, whole wheat cake flour, shredded coconut, and eggs. Mix thoroughly.

Bake

Pour batter into the pan and smooth the surface. Bake for 25 minutes until the cake is golden brown and firm to the touch. Cool in the pan.

Slice

Remove from pan, place the cake on a cutting board, and cut into bars.
