Ingredients

Chinese yam (tied securely in a cheesecloth bag) to taste
Cistanche (tied securely in a cheesecloth bag) to taste
Dodder seed (tied securely in a cheesecloth bag) to taste
Walnut kernels (tied securely in a cheesecloth bag) 2
Lean lamb (washed, blanched to remove blood, cut into 5 cm thick strips) 500 g
Lamb spine bone (chopped into several sections, washed with clean water) 1
Round-grained rice 100 g
Scallion white (cut into sections) 3
Ginger (smashed) to taste
Sichuan peppercorns to taste
Star anise to taste
Cooking wine to taste
Ground white pepper to taste
Salt to taste

Ingredient pre-processing

Chop the lamb spine bone into several sections and wash with clean water; wash the lean lamb, blanch to remove blood, then wash again and cut into 5 cm thick strips; tie the Chinese yam, Cistanche, dodder seed, and walnut kernels securely in a cheesecloth bag; smash the ginger; cut the scallion into sections.

Stewing

Place the medicinal ingredients and food ingredients into an earthenware pot, add an appropriate amount of clean water, bring to a boil over high heat, skim off the foam; add Sichuan peppercorns, star anise, and cooking wine, then switch to low heat and continue simmering until the meat is tender.

Seasoning

Remove from the pot into a serving bowl, add ground white pepper and salt to taste, and serve immediately.
