Garlic Scapes with Pork
A quick and flavorful stir-fry featuring tender pork and crisp garlic scapes. This home-style dish comes together in minutes and makes a perfect weeknight dinner when paired with steamed rice.
Story
Garlic scapes are the edible flower stalks of garlic plants. They have a milder, more complex flavor than regular garlic cloves and add a wonderful crunch to stir-fries. Look for firm, bright green stalks at Asian grocery stores during spring and early summer.

Prepare the pork
Slice the pork tenderloin into thin strips, about 1/4 inch thick. Toss the slices in a bowl with the cooking wine and cornstarch until evenly coated. Let it sit for 10 minutes while you prep the vegetables.
Prep the garlic scapes
Trim the tough ends from the garlic scapes and cut them into bite-sized pieces, around 2 inches long. Rinse briefly and pat completely dry with paper towels.
Stir-fry the pork
Heat a wok or large skillet over high heat until smoking. Add 1 tablespoon of oil, then swirl to coat. Add the marinated pork and spread into a single layer. Let it sear for 30 seconds without stirring, then toss and cook until just cooked through, about 1-2 minutes total. Transfer to a plate and set aside.
Cook the garlic scapes
Add the remaining oil to the wok over high heat. Add the garlic scapes and stir-fry vigorously for 2 minutes until they turn bright green and develop charred spots while retaining their crisp-tender texture.
Combine and finish
Return the pork to the wok with the garlic scapes. Add the soy sauce and a pinch of salt. Toss everything together for 30 seconds until well combined and heated through. Serve immediately over steamed rice.
