Prepare the Purple Potato
Peel the purple potato and cut it into evenly sized chunks. Place them in a steamer basket over boiling water and steam for about 20 minutes, or until fork-tender. Remove and mash thoroughly into a smooth paste. Set aside to cool slightly.
Mix the Pork Filling
Finely dice the shiitake mushrooms and scallions. In a mixing bowl, combine the ground pork, diced mushrooms, scallions, ginger, light soy sauce, dark soy sauce, oyster sauce, and cornstarch. Stir vigorously in one direction until the mixture becomes sticky and well-combined.
Form the Meatballs
Take a small portion of the mashed purple potato and flatten it slightly in your palm. Place a spoonful of the pork filling in the center and then wrap the potato around the meat, sealing it completely to form a ball. Repeat until all ingredients are used.
Steam the Dish
