This 'Eight-Treasure' rice is a complete meal in a bowl. By steaming the ingredients in stages, you ensure that the meats are cooked through while the vegetables stay vibrant and crisp. It's a wonderful way to use leftover rice or various proteins.

Ingredients

White rice 2 cups
Pork ribs 100g
Chicken mid-wings 2 pieces
Pork meatballs 4 pieces
Chinese sausage (Lap Cheong) 1 link
Shrimp 4-6 pieces
Shiitake mushrooms 2 pieces
Eggs 2
Lettuce 2 leaves
Green onions 2 stalks
Fresh chili 1 ring

Par-cook the Rice

Steam the white rice until it is about 80% done. You can place raw eggs in the steamer at this stage to hard-boil them alongside the rice.

Layer Main Proteins

Arrange the pork ribs, chicken wings, meatballs, sliced Chinese sausage, soaked mushrooms, shrimp, and sections of green onion directly on top of the partially cooked rice. Cover and steam for another 5 to 6 minutes.

Add Aromatics and Finish

Add the remaining sausage slices and fresh chili rings to the steamer. Steam for 1 minute more. Finally, place the lettuce and chopped green onions on top and steam for just a few seconds until wilted. Serve hot.
