Garlic Tender Tofu
With a frying pan, I now have the confidence to cook many dishes that I used to struggle with. Pan-frying tofu used to be quite a technical task for me, but now with a non-stick pan, I can fry tofu with perfect results every time, greatly boosting my confidence. Today after work, I saw my mother-in-law had bought some soft tofu, so I volunteered to take on the challenge. I used to always fry firm tofu since it's less likely to break, but the soft tofu turned out just as well today—you just have to be a little more careful when flipping it. I purposely used less chili for my son, and he really enjoyed it at dinner. You should all give it a try too.

Step 1
Prepare the main ingredients: tofu, garlic, scallions, and chili peppers.
Step 2
Slice the tofu into small pieces.
Step 3
Pour an appropriate amount of oil into a flat-bottomed pan, add the tofu and start pan-frying.
Step 4
Pan-fry until the tofu turns golden brown, then flip it over and pan-fry the other side until done.
Step 5
While waiting for the pan-frying, cut the scallions, garlic, and chili peppers and set them aside. The leaves cook quickly, so set them aside separately.
Step 6
Place the pan-fried tofu on a plate and set aside.
Step 7
Add the chili peppers, white parts of the garlic, and white parts of the scallions into the oil in the pan and stir-fry until fragrant.
Step 8
Add the pan-fried tofu in.
Step 9
Add cooking wine, soy sauce, a little salt and sugar, then add water and boil for a while.
Step 10
Finally, add the scallions and garlic leaves.
Step 11
Finally, slice a few pieces of Taiwanese sausage to garnish, and the dish is done.

Plate and serve.
