Garlic Vermicelli Lobster Tails
I picked up two smaller lobster tails today, and remembered how fragrant and delicious my garlic-roasted lobster tails turned out last time. As I love trying new recipe variations, I’m switching to steaming with minced garlic this time, paired with vermicelli to soak up all the savory lobster juices. Some people say the vermicelli ends up tastier than the lobster, but I still prefer the lobster meat myself—it has such a crisp, refreshing texture. Of course, the vermicelli that absorbs all the rich lobster flavor is also incredibly tasty.
Ingredients
Instructions
Step 1
Soak the vermicelli for about 2 hours, then cut it into several sections with scissors after soaking.
Step 2
Add 1/2 tsp fish sauce and 1/4 tsp fine salt to the vermicelli and toss lightly to marinate, giving the vermicelli a base flavor. To keep the vermicelli white, no colored seasonings were used.
Step 3
Spread the vermicelli on a plate.
Step 4
Cut off the transparent membrane on the surface of the lobster.
Step 5
Flip to the back, poke 1–2 holes in the gaps of each segment so that when the lobster tail is steamed, the juices flow down and the vermicelli becomes more flavorful.
Step 6
Prepare about 10 cloves of garlic, 1 piece of ginger, 1/4 of a large shallot, and 1 red chili.
Step 7
Place into a hand-pulled chopper and mince.
Step 8
Then add 1/4 tsp fine salt, 1/8 tsp sugar, 1/4 tsp pepper powder, 1 tsp white wine, and 1/2 tsp sesame oil to the minced garlic-ginger-shallot mixture, and mix well.
Step 9
Separate the green and white parts of the scallion. Cut the green part into shreds and soak in cold boiled water; dice the white part.
Step 10
Bring water to a boil in the steamer. Place the lobster tails on the vermicelli, spread the garlic seasoning evenly on the surface, and place in the steamer to steam.
Step 11
Cover and steam for 4–5 minutes.
Step 12
After steaming, remove from the pot and evenly sprinkle scallion shreds and diced scallions. Heat about 2 tbsp oil in a small pan, and once hot, drizzle it over the garlic mixture. Done! Enjoy!
