Story

This classic Chinese bar snack packs a punch with its garlicky zing and satisfying chew. The paws are briefly blanched to achieve that pleasant texture, then soaked in the sauce to absorb all those bold flavors.

Ingredients

Chicken feet 6 paws
Garlic cloves 4, minced
Rice vinegar 3 tablespoons
Light soy sauce 2 tablespoons
Fresh ginger 3 slices
Green onions 2 stalks, cut into sections
Sugar 1 teaspoon
Sesame oil 1 teaspoon
Red chili (optional) 1, sliced

Prepare the chicken feet

Rinse the chicken feet thoroughly under cold water. Pat dry, then cut each paw into 2-3 pieces for easier eating.

Blanch the paws

Bring a pot of water to boil. Add ginger slices and green onion sections. Drop in the chicken pieces and cook for about 10 minutes until they turn slightly opaque. Drain and rinse twice with cold water to remove any residual slime.

Make the marinade

In a bowl, combine rice vinegar, soy sauce, minced garlic, sugar, and sesame oil. Stir until the sugar dissolves completely.

Marinate and serve

Place the cooled chicken pieces in a container. Pour the marinade over top, adding sliced chili if you like heat. Toss to coat evenly. Cover and refrigerate for at least 2 hours, stirring occasionally. Serve chilled.
