Clean the tripe
Rub the pork tripe thoroughly with coarse salt and white vinegar repeatedly until the surface is no longer slimy.
Parboil the tripe
Rinse the tripe and place it in a pot with cold water. Bring to a boil and cook until the surface firms up and the slime is gone.
Finish cooking
Remove the tripe from the water, clean it again, and return to a pot of fresh water. Boil until tender, then remove and let cool.
Slice the tripe
Once cooled, slice the tripe into thin pieces.
Make the ginger sauce
Grate the ginger to extract the juice. In a bowl, mix the ginger juice with soy sauce, chicken broth, salt, and MSG.
Toss and serve
Pour the sauce over the sliced tripe and mix well. Drizzle with sesame oil before serving.
