Story

This beloved Chinese classic is celebrated for its juicy, tender duck and bright, aromatic broth that offers a perfect balance of warmth and freshness.

Ingredients

duck (washed, cut into chunks) 1/2 piece (about 300g)
ginger (over half cut into shreds, the remaining ground into fine crumbs to squeeze out ginger juice) 1 large piece
scallion 1 stalk
Sichuan peppercorns as needed
cinnamon bark as needed
star anise as needed
cooking oil 30g
cooking wine 2大匙
refined salt 2 teaspoons

Instructions

Step 1

Wash the ginger thoroughly, cut the majority of it into shreds, grind the remaining portion into fine crumbs, then squeeze out the ginger juice using cheesecloth.

Wash the duck thoroughly, cut it into chunks, blanch in boiling water, then remove and set aside.

Pour oil into a wok and heat until hot, add the shredded ginger and stir-fry over high heat until fragrant, then add the duck chunks and stir-fry together. Add salt, then pour in cooking wine and a small amount of water, bring to a boil, then turn off the heat.

Place the duck chunks into a bowl, transfer the bowl to a steamer, add the ginger juice, steam over high heat for approximately 2 hours, then sprinkle with the shredded ginger before serving.
