Ginseng and Aconite Pigeon (Mandarin Ducks at Play)

Ingredients

Codonopsis root 50 g
Processed aconite slices 5 g
One-month-old male and female squab 2
Rice wine 50 g
Rock sugar 200 g

Preparing the pigeons

First smother the pigeons, pluck the feathers and rinse clean. Use scissors to open the cavity and remove the内脏 (innards), keeping the blood water.

Steaming

Place the pigeons, codonopsis root, processed aconite slices, and rock sugar together in a basin. Add water to taste, set the basin in a pot, and steam over water for 1 hour.

Seasoning and serving

Remove from heat, strain out and discard the herbal residue, stir in the rice wine, transfer to a serving dish, and bring to the table.
