Glazed Kabobs

Ingredients

new potatoes (or 1 large potato, cut into 8 chunks) 8 small
carrots (cut into 8 pieces (2 inches each)) 3
pork tenderloin (cut into 12 equal pieces) 1 pound
green or sweet red pepper (cut into eight chunks) 1 large
mushrooms 8 large
butter (cubed) 1/4 cup
maple syrup 1/4 cup
grated orange peel 1-1/2 teaspoons

Instructions

1

Prepare the vegetables

Place potatoes and carrots in a large saucepan and add enough water to cover. Bring to a boil. Reduce the heat; cover and simmer for 10-15 minutes until crisp-tender. Drain.

2

Assemble the skewers

Cut the pork into 12 equal pieces and the pepper into 8 chunks. On 4 metal or soaked wooden skewers, alternately thread the meat and vegetables; set aside.

3

Make the glaze

In a small saucepan, combine the butter, maple syrup, and orange peel; cook and stir over low heat until the butter is melted.

4

Grill the kabobs

Uncovered, grill the kabobs over medium heat for 5 minutes; turn and brush with the butter mixture. Continue grilling, turning and brushing often, for 14-17 minutes until the meat juices run clear and the vegetables are tender.
