Golden Sweet Potato Pancakes

Crispy on the outside, soft and naturally sweet on the inside. These simple pancakes come together with just a few ingredients and make a delightful snack or light dessert. The steam-cooked sweet potato gets mashed with a touch of sugar, bound with glutinous rice flour, then pan-fried until beautifully golden.

Golden Sweet Potato Pancakes

Story

A humble snack that warms the soul. The natural sweetness of the sweet potato pairs wonderfully with the subtle chewiness of glutinous rice flour. These little pancakes disappear fast, so make extra!

Ingredients

sweet potatoes, peeled and cubed 300g
granulated sugar 2-3 tbsp
glutinous rice flour 100g
vegetable oil for frying
sesame seeds optional, for garnish

Instructions

Steam the sweet potato

Place the cubed sweet potatoes in a steamer basket. Steam over boiling water for about 15 minutes until fork-tender.

Make the batter

Transfer the hot sweet potato to a bowl. Add the sugar and mash until smooth. Sprinkle in the glutinous rice flour and mix until a soft, pliable dough forms.

Shape the pancakes

Divide the dough into 8 equal portions. Roll each into a ball, then flatten into a small disc about 1cm thick.

Pan-fry until golden

Heat a thin layer of oil in a non-stick skillet over medium heat. Cook the pancakes in batches, about 2-3 minutes per side, until golden brown and crispy. Flip carefully to avoid breaking.

Serve warm

Drain on paper towels. Sprinkle with sesame seeds if desired. Enjoy immediately while crispy!
