Steam the sweet potato
Place the cubed sweet potatoes in a steamer basket. Steam over boiling water for about 15 minutes until fork-tender.
Make the batter
Transfer the hot sweet potato to a bowl. Add the sugar and mash until smooth. Sprinkle in the glutinous rice flour and mix until a soft, pliable dough forms.
Shape the pancakes
Divide the dough into 8 equal portions. Roll each into a ball, then flatten into a small disc about 1cm thick.
Pan-fry until golden
Heat a thin layer of oil in a non-stick skillet over medium heat. Cook the pancakes in batches, about 2-3 minutes per side, until golden brown and crispy. Flip carefully to avoid breaking.
Serve warm
Drain on paper towels. Sprinkle with sesame seeds if desired. Enjoy immediately while crispy!
