These colorful dumplings are perfect for a fun cooking project with family or friends. The technique of layering green and white dough creates a gorgeous spiral pattern when the dumplings are folded.

Ingredients

all-purpose flour 3 cups
spinach juice or kale juice 3/4 cup
warm water 3/4 cup
ground pork 1 pound
napa cabbage 2 cups finely chopped
green onions 3 stalks minced
soy sauce 2 tablespoons
sesame oil 1 tablespoon
ginger 1 inch grated
salt to taste

Make the doughs

Divide flour into two portions. Mix one portion with spinach juice and the other with warm water. Knead each until smooth, about 8 minutes each. Cover and rest for 20 minutes.

Create the swirl pattern

Roll each dough into a long rope about 1 inch thick. Place the white rope on top of the green rope and gently pinch them together. Cut into pieces about 3 centimeters wide.

Roll out wrappers

Flatten each piece with your palm, then use a rolling pin to create thin circular wrappers. The green and white pattern should show through.

Prepare the filling

Mix pork, cabbage, green onions, soy sauce, sesame oil, and ginger in a bowl. Season with salt. Stir in one direction until mixture becomes slightly sticky.

Fill and fold

Place a spoonful of filling in each wrapper. Fold in half and pinch the edges to seal, creating pleats for a traditional look.

Cook the dumplings

Bring a large pot of water to boil. Add dumplings and stir gently to prevent sticking. Cook until they float, about 8 minutes. Drain and serve with dipping sauce.
