This refreshing Chinese cold salad brings together the satisfying chewiness of dried tofu and the crisp, vibrant crunch of shredded green and red peppers. Quick to prepare and lightly seasoned, it serves as a perfect appetizer or a cooling side dish to balance out a hearty meal.

Ingredients

dried tofu 6 pieces
green, red chili peppers 2 pieces each
scallion to taste
garlic to taste
soy sauce to taste
sugar to taste
black vinegar to taste
sesame oil to taste
green pepper

Instructions

Step 1

Wash the green peppers and cut into shreds. Blanch in boiling water until cooked, remove, and soak in cold boiled water; remove when cooled. Wash the red pepper, remove the stem, and cut into shreds. Peel the garlic and mince. Wash the scallions and finely chop.

Wash the dried tofu, cook in boiling water until done, remove, and cut into thick shreds. Place in a bowl, add soy sauce, sugar, black vinegar, and minced garlic, and mix well.

Then add the chopped scallions, shredded green peppers, and shredded red peppers, and mix well. Drizzle with sesame oil when ready to eat.
