This simple noodle soup comes together quickly, making it a comforting choice for breakfast or a light meal. Ingredients

Fine noodles a pinch
Shrimp five
Green vegetables a handful
Minced scallion to taste
Cilantro to taste
Salt to taste
Vinegar to taste
Light soy sauce to taste
Roasted sesame seeds to taste
Sesame oil to taste

Instructions

Step 1

Take out a pinch of fine noodles and set aside

Add noodles when the water boils, bring to a boil twice, and add cold water twice

While the noodles are cooking, prepare the greens and shrimp; remove the heads and veins from the shrimp, wash, and set aside

After adding water the second time and it boils, add the greens and shrimp, and boil until cooked

Season the soup bowl: salt, vinegar, light soy sauce, minced green onion and cilantro, toasted sesame seeds

Once the noodles are cooked, use the boiling noodle water to pour over the soup base; it has a faint green vegetable aroma
