Ham and Pea Stir-fry

While picking up fresh sausages at the market, I spotted tender young ones on offer and grabbed some pea pods to make this simple ham and pea stir-fry. The dish is incredibly easy to prepare — the key is cooking the peas just enough to keep their vivid green color. Bright green peas paired with pink ham look irresistible. Here's how to make it.

Ham and Pea Stir-fry

Ingredients

tender peas a handful
ham 1
scallion, ginger, garlic to taste

Instructions

1

Step 1

We bought a handful of pea pods at the market, shelled them, and rinsed them clean. Freshly shelled peas taste absolutely delicious.

2

Step 2

Bring a pot of cold water to a boil, add a pinch of salt and a little vegetable oil to the water.

3

Step 3

Boil the peas until just tender. Overcooking them until mushy or undercooking them so they're hard will both ruin the texture of this dish. Peas boiled with oil turn a bright, vibrant green and look very appealing.

4

Step 4

We use a store-bought pre-stuffed ham sausage we got at the market; one large piece is enough for this recipe. Cut it into small pieces.

5

Step 5

Add a small amount of oil to the pan, then add the scallion, ginger, and garlic. Stir-fry until fragrant, then add the peas and toss quickly over high heat.

6

Step 6

Add the cut ham. This homemade stuffed ham sausage is already salty enough on its own, and it's seasoned with a mix of spices, so use less of other seasonings.

7

Step 7

Add a small amount of salt and chicken bouillon, then stir-fry quickly to combine.

8

Step 8

If you prefer, you can add a cornstarch slurry to thicken the sauce. I didn't add any for this version.

Step 9

Transfer to a serving dish!

Step 10

A delicious, quick stir-fry is ready to serve.
