Ham and Swiss Appetizer Cheesecake

Ham and Swiss Appetizer Cheesecake

Ingredients

crushed round wheat crackers (about 28 crackers) 1 cup
butter or margarine (melted) 3 tablespoons
cream cheese (softened) 2 packages (8 oz each)
whipping (heavy) cream 1/4 cup
eggs 2
finely shredded Swiss cheese 2 cups (8 oz)
chopped fully cooked ham 1 cup
chopped drained roasted red bell peppers (from 7.25-oz jar) 1/2 cup
green onions (sliced (1/4 cup)) 4 medium
chopped fresh or dried thyme leaves 2 tablespoons fresh or 1/2 teaspoon dried
assorted crackers 1 package (13 oz)

Step 1

Preheat oven to 350°F. Mix crushed crackers and butter in a medium bowl until well combined. Press evenly into the bottom of an ungreased 9-inch springform pan. Bake for 8 to 10 minutes until golden brown.

Meanwhile, beat cream cheese in a large bowl with an electric mixer on medium speed until smooth. Add whipping cream and eggs; beat until smooth. Stir in cheese, ham, bell peppers, onions, and thyme. Spoon evenly over the crust in the pan.

Bake for 45 to 55 minutes until the center is set. Run a knife around the edge of the cake to loosen. Cool completely, about 1 hour. Cover and refrigerate at least 2 hours but no longer than 48 hours.

Remove the side of the pan. To serve, cut the cheesecake into thin wedges. Serve with crackers.
