Ingredients

red lentils 1 cup
onion, diced 1 medium
carrots, sliced 2 medium
potatoes, cubed 2 small
vegetable or chicken broth 4 cups
water 2 cups
all-purpose flour 2 tablespoons
cooking oil 2 tablespoons
salt to taste
black pepper to taste

Prep the lentils

Rinse the red lentils thoroughly under cold water until the water runs clear. This removes any dust or debris.

Start the aromatics

Heat oil in a large pot over medium heat. Add the diced onion and cook until softened and translucent, about 4 minutes. Sprinkle in the flour and stir for another minute until fragrant.

Add vegetables and lentils

Add the sliced carrots and cubed potatoes to the pot. Stir everything together, then add the rinsed red lentils.

Simmer until tender

Pour in the broth and water. Bring to a boil, then reduce heat and let simmer for 30-35 minutes until the lentils have completely broken down and the vegetables are tender.
