Homemade chopped chili is far superior to store-bought versions, and it is much cleaner and more hygienic.

Ingredients

red chili peppers 4 jin
garlic 1 jin
fresh ginger 1 jin
high-proof alcohol half a jin
table salt 1 bag

Instructions

Step 1

Remove the stems from fresh chili peppers, wash them and let them dry thoroughly.

Wash the ginger and let it dry completely.

Peel the garlic cloves.

Finely chop the red chili peppers, garlic cloves and ginger separately.

Add high-proof liquor.

Add salt.

Stir to mix all ingredients evenly.

Scoop the mixture into a pre-dried ceramic jar (the jar must be free of water and oil).

Cover with plastic wrap and a lid, add water along the edges, and let it ferment for approximately two weeks before it is ready.
