Homemade Dried Egg Whites
Recently, while making mooncakes, I had a lot of salted egg whites left over. I used to throw them away, but after coming across a recipe for homemade egg dry, I decided to use the salted egg whites to make it instead. The result turned out delicious.
Ingredients
Instructions
Step 1
Salted egg whites; do not stir.
Step 2
Grease the plate to prevent sticking, then pour in the salted egg whites.
Step 3
Place in a steamer over boiling water and steam on high heat for 10 minutes.
Step 4
Once the egg whites are set, it's done.
Step 5
Let the salted egg whites cool, then slice them.
Step 6
Add water to a pot (use plenty, since the salted egg whites are quite salty), then add the braising spice packet, star anise, dried tangerine peel, cinnamon bark, Sichuan peppercorns, and dark soy sauce. (The dark soy sauce is for color; do not add other seasonings, as the salted egg whites are already salty.)
Step 7
Once the braising liquid comes to a boil, add the sliced salted egg whites.
Step 8
After it boils, reduce to low heat and simmer for 10 minutes, then turn off the heat and let it steep for 2 hours to allow the saltiness to infuse.
Step 9
Enjoy as a braised snack or use it in stir-fries—salty, fragrant, and perfect with rice.
