Loofah Meatball Soup
Loofah is valued for clearing heat, dispelling wind and phlegm, and moisturizing the skin—many call it a "beauty vegetable." Made into a soup, it has a delicate, refreshing flavor that's especially delicious.

Prepare all the ingredients.
Step 2
Add cooking wine, light soy sauce, oyster sauce, white pepper, minced ginger, and egg white to the meat. Mix well.
Step 3
Add an appropriate amount of starch to the meat mixture and stir well.
Step 4
Stir the meat mixture clockwise. Insert a chopstick into the meat mixture—if it stands upright, the mixture is ready.
Step 5
Peel the loofah and cut it into thin strips. Transfer the meat mixture into a piping bag.
Step 6
Bring water to a boil in a pot and add a slice of ginger.
Step 7
Cut a small opening at the bottom of the piping bag and squeeze the meat mixture into the pot to form meatballs.
Step 8
Cook until the meatballs float to the surface.
Step 9
Add an appropriate amount of salt to season.
Step 10
Add the loofah and cook until tender.
Step 11
Remove from heat and drizzle with sesame oil.
Step 12
Sprinkle with chopped scallion and cilantro before serving.
