Homemade Style ~ Yu Xiang Rou Si (Fish-Flavored Shredded Pork)

Ingredients

carrot 1/2
wood ear mushrooms a small handful
ginger to taste
scallions to taste
pork tenderloin 200g

Instructions

Step 1

Cut the ingredients into thin strips as shown in the picture and set aside.

Marinade: 1 tbsp cooking wine, 1/2 tbsp light soy sauce, 1 tbsp cornstarch. Marinate the pork tenderloin with the above mixture for about 10 minutes. Fish-flavored sauce: 2 tbsp light soy sauce, 2 tbsp Chinkiang vinegar, 2 tbsp sugar, 1 tbsp oyster sauce, 1 tbsp cooking wine, 1 tbsp cornstarch, 1/2 bowl of water. Mix the sauce well — let's get cooking!

Heat oil in a wok, then add the marinated pork strips and stir-fry quickly until they change color. Remove and set aside.

Leave a little oil in the wok, add minced scallions, ginger, and garlic, and stir-fry until fragrant. Add the shredded carrots and wood ear mushrooms and stir-fry for 1 minute, then add the shredded green peppers and stir-fry until just tender. Pour in the cooked pork strips and stir to combine, then add the prepared fish-flavored sauce. Reduce over high heat until the sauce thickens, toss until everything is evenly coated, and serve.
