Homemade Mille Crepe Cake — Rich Milky Flavor, Soft and Silky Smooth

Ingredients

eggs 2
milk 200 g
cake flour 40 g
corn oil 10 g
granulated sugar 20 g
salt 1 g
whipping cream 400 g
granulated sugar 40 g

Instructions

1

Step 1

Add 60 g of milk to 40 g of cake flour and mix until smooth. Then add the remaining 140 g of milk and continue mixing until well combined.

2

Step 2

Beat 2 eggs, then add them along with 10 g corn oil, 20 g sugar, and 1 g salt. Mix until smooth.

3

Step 3

Sift the batter and refrigerate for 30 minutes.

4

Step 4

Take out the batter, brush a thin layer of oil on a non-stick pan, and pour in a ladle of batter.

5

Step 5

Swirl the pan to spread the batter thinly and pour out any excess.

6

Step 6

Cook over low heat until the batter sets. This recipe makes about 8 crepes around 8 inches in size.

7

Step 7

Use an 8-inch mold base as a guide to cut out perfect circles.

8

Step 8

Refrigerate the crepes for 1 hour.

9

Step 9

Whip 400 g of heavy cream with 40 g of sugar until stiff peaks form (about 80% firmness).

10

Step 10

Place a sheet of parchment paper on the 8-inch mold base, lay down a crepe, and spread a layer of whipped cream on top.

11

Step 11

Smooth the cream evenly with a spatula.

12

Step 12

Place another crepe on top and spread another layer of whipped cream. Repeat the layering process until done.

13

Step 13

Once all layers are assembled, refrigerate for 1 hour to set.

14

Step 14

Dip the knife in hot water before each cut for cleaner slices.

15

Step 15

Homemade mille crepe cake — done!

16

Step 16

Make one for your family — it's simple and easy.

17
