Homemade Nougat with Cranberries
A soft, buttery candy made by folding marshmallows with milk powder and dried fruit. This simple stovetop treat comes together in minutes and makes a lovely homemade gift.

This recipe makes tender, chewy nougat with a lovely tang from the dried cranberries. For variety, try folding in crushed roasted peanuts or switching to dried apricots.

Melt the butter
Add butter to a non-stick pan over low heat. Stir occasionally until completely melted and foamy.
Incorporate the marshmallows
Add marshmallows to the melted butter. Stir continuously with a silicone spatula until the marshmallows melt into a smooth, sticky paste.
Mix in the milk powder
Sift the milk powder over the marshmallow mixture and fold until fully combined. The mixture should become thicker and pull away from the pan edges.
Add the cranberries
Fold in the dried cranberries distributed evenly. Remove from heat immediately.
Shape the nougat
Transfer the hot mixture to a parchment-lined baking dish or pan. Press down firmly with your hands or a rolling pin to create an even layer about 2cm thick. Let cool completely until set, about 20 minutes.
Cut and wrap
Once cooled and firm, cut into small rectangular pieces. Wrap each piece first in rice paper, then in decorative candy wrappers.
