Ingredients

beef shank 1
salt 1 tbsp
light soy sauce 2 tbsp
dark soy sauce 1 tbsp
Sichuan peppercorns 30
dried chili peppers 6
fennel seeds 1 tsp
bay leaves 4
cooking wine 2 tbsp

Step 1

After purchasing the beef shank, remove any dirt from the surface and clean it. Place it in a bowl and soak in clean water for 30 minutes to remove blood and impurities.

Pour an appropriate amount of water into a pot and blanch the soaked beef shank.

Combine 1 tbsp salt, 2 tbsp light soy sauce, 1 tbsp dark soy sauce, 30 Sichuan peppercorns, 6 dried chili peppers, 1 tsp fennel seeds, 4 bay leaves, and 2 tbsp cooking wine in a bowl to make the braising sauce.

Place the blanched beef shank into a rice cooker, add enough water to cover the beef, then pour in the braising sauce. Set it to the cook mode and cook until a chopstick can easily pierce through the meat.

Once cooled, remove the beef and let it cool down, then soak it in the braising sauce in the refrigerator overnight.
